1lb Fresh or Frozen Strawberries Half the Fresh Strawberries
1/8cup Water
1 1/4 tspFresh Squeezed and strained Lemon Juice
1/8-1/4cupGranulated Sugar
For Thickening
1tbspCorn Starch
1 tbsp Water
Instructions
Strawberry Glaze
Over high heat in a medium saucepan combine strawberries, water, lemon juice, and gradually add the sugar slowly. Stir and boil for a few minutes.
Reduce the heat and simmer for 10 minutes.
Remove from the heat and use an immersion blender or a stainless-steel potato masher to puree or crush the strawberries down.
(With a medium bowl under a strainer) gently pour the sauce into the strainer. Whisk the sauce in the strainer as the juice strains into the bowl. Continue whisking until all the liquid is strained from the strawberry pulp remains.
To Thicken the Glaze
In a small bowl mix 1 tbsp water with 1 tbsp cornstarch.
Throw away the strawberry pulp remains and pour the juice back into your saucepan. Turn the heat on low and simmer the juice.
Add the cornstarch mix into the simmering juice. Increase the heat and whisk for a few more minutes until the juice thickens.
Remove from the heat and put into a bowl to cool down.
Once the glaze is room temperature chill in the frig. Top on cheesecake or any other dessert that pairs well with strawberry glaze.
Notes
1 lb of strawberries seems like a lot but it's really not so for a full-sized cheesecake, I suggest doubling the recipe just so you have more for those who like extra strawberry glaze.
For less sugar add only 1/8 cup of sugar. Or up to a 1/4 for more. Just remember, if you're using frozen strawberries your glaze may not need extra water. The thickness of the glaze is up to you depending on the amount of water added.
Use a tight strainer to avoid too many seeds or much pulp getting through.
If you like, add a few drops of red food coloring for a brighter glaze.
Pair the glaze with other desserts or breakfast foods.
The Sauce will thicken a bit more when cooled. Chill in the frig and serve when ready.
Store up to 3-5 days in the frig.
